Does any body know how you call the sub for meat? in spanish is called gluten... what's the name in english and at what store can i buy it?

Nope nope.

Seitan is made from gluten flour. Seitan does not mean gluten.

Vital Wheat Gluten is not a brand. It IS the gluten. Gluten is the "vitality" of the wheat. The protein of wheat.

You can buy gluten, gluten flour, vital wheat gluten (different peeps call it different things) in the bulk bins at Whole Foods.

If you are looking for Seitan - which is a meat substitute made from gluten flour - I highly recommend White Wave. It's my fave.

Making seitan is SUPER easy though.

2 cups gluten flour
1-1/4 cups veggie broth
3 Tablespoons lite tamari, Braggs liquid amino acids, or soy sauce

I also like to add two tablespoons Nutritional Yeast - for a good shot of vitamins.

6 to 8 cups veggie broth separately.

You can use water. But veggie broth adds flavor. Add what ever dry spices you like to the flour before adding the fluids. For instance, if you're making veggie chicken, add poltry seasonings. It gets REALLY sticky once you start adding the fluid.

First mix your veggie broth to your tamari. If you try to pour the tamari right into the flour, it will be immediately absorbed to that spot and not to the whole batch of flour.

Add the fluids a little at a time. Knead well for about 10 minutes.

It helps to set it aside for about half an hour so it can rise a bit. At this point, put your veggie broth on to boil. Again, you can use water for this, but veggie broth adds flavor.

Roll it out and cut it. Please note that it will TRIPLE in size when you cook it. It cooks rather quickly. So keep an eye on it.

Store it in the cool broth that you cooked it in. It makes quite a bit, so share it with your friends. It has no preservatives so don't keep it for more than a week.

It can be called wheat gluten or seitan (pronounced say-tan, not to be confused with satan, who is not edible.) Ask for gluten, it's the same word, pronounced with the accent on the first syllable...a good brand is Vital Wheat Gluten. Look for it at healthfood stores or Wholefood stores.

The only other word I know of for gluten is a japanese word, seitan. We use both words here, but gluten is most common.
