Most Greek salads have a really simple dressing. There's a couple different variations, so here's a couple :)
Dressing 1
DRESSING:
1 tbsp. oregano
1 tsp. parsley
5 tbsp. olive oil
2 to 3 tsp. vinegar
Garlic powder
Salt and pepper to taste
Dressing: Mix together oregano, parsley, olive oil, vinegar, garlic, powder, salt, and pepper. Pour over salad.
Dressing 2
1/2 c. red wine vinegar
2 cloves crushed garlic
1/2 tsp. basil
1 tbsp. sugar
1/2 tsp. salt
1/4 tsp. white pepper
1 c. vegetable oil
1/2 c. olive oil
Put all the ingredients except the 2 oils to soak in the vinegar for at least 20 minutes. At any time after that, add the oils and shake. Makes 1 pint.
Dressing 3
1/2 cup olive oil
2 tablespoons cider vinegar or red wine vinegar
1/2 clove garlic, cut in half lengthwise
1/8 teaspoon salt, to taste
1/8 teaspoon dry mustard
1/4 teaspoon dried oregano
1 dash pepper
Combine all ingredients in a non-reactive container; shake well and let stand overnight at room temperature.
Delicious on a classic Greek salad with cucumber, tomato, feta cheese and olives.

In Greece a true Greek salad is served without lettuce. Here is one that will lend itself well to cooked chicken, shrimp or even turkey sprinkled on top, which of coarse will not make it a true Greek salad lol!. This is my own recipe, I hope you enjoy it as much as my family does. This salad must be chilled for a minumum of 2 hours before serving, don't even bother eating it before the 2 hours, this salad will take on a whole different flavor when chilled! The dressing ingredients may be doubled.
1 lb tomatoes, seeded and chopped
1 large cucumber, peeled, seeded and chopped
1 large red bell pepper, sliced thinly
1-2 cup kalamata olives
1 small red onion, sliced thinly
6 tablespoons olive oil
3 tablespoons red wine vinegar
1 teaspoon dried oregano (more if desired)
1 tablespoon grated parmesan cheese (optional)
1 teaspoon sugar
salt and black pepper
1 1/2 cups crumbled feta cheese (use more if desired)
fresh lemon juice

Greek Basil Dressing
1 Garlic clove; minced
1 Shallot or scallion, cut into thirds
6 Greek olives; pitted
1 teaspoon Dijon mustard
1 tablespoon Balsamic vinegar
1/4 teaspoon Grated lemon zest
1 tablespoon Fresh lemon juice
1 sm Tomato; quartered
1/4 teaspoon Freshly ground pepper
3 tablespoon Chopped fresh basil
1/4 c Olive oil
Salt and pepper; to taste
In a blender or food processor, blend all ingredients except olive oil. Add olive oil gradually, processing until combined. Add salt and pepper to taste.
Yield: Makes 2/3 cup.
Greek Dressing
1/2 teaspoon Dry Mustard
1/2 teaspoon Salt
1 Large Egg
1-1/4 cup Salad Oil
1 tablespoon White Vinegar
2 tablespoon Lemon Juice
6 Cloves Garlic, finely minced
1 teaspoon Dried Oregano
1/2 teaspoon Worcestershire sauce
1 dash Pepper (to taste)
In a small but deep bowl, mix mustard, salt, egg and vinegar. Add oil one drop at a time, beating constantly, until about one-third of the oil have been added. (Once the mixture begins to thicken, oil can be added several drops at a time). Slowly beat in remaining oil and lemon juice. Stir in minced garlic, oregano, worcestershire sauce. Add pepper. Refrigerate mixture.
Makes about 1-1/4 cups.
Greek Salad Dressing
6 tablespoons olive oil
2 tablespoons fresh lemon juice
1 clove garlic; crushed
pinch dried oregano
salt and pepper
Place all the ingredients in a screw-top jar. Shake well just before using on the salad ingredients

All you need is good extra virgin olive oil, lemon juice and oregano, simple as that! Drizzle all over your salad or alternatively combine in a jar and add as you please.
