I usually eat oatmeal or a bagel for breakfast with coffee.

For lunch I usually eat a bean burrito either from the grocery store or from Taco Bell.

For dinner I sometimes eat a salad and rice with veggies or a quesadilla (SO cheap and SO easy to make)

For snacks, think about yogurt, pretzels, fruit, dark chocolate

once you get used to not eating meat, it's really easy!

Pasta is vegetarian...baked potatoes...beans...

I buy those frozen bean and cheese burritos from the grocery store bc they are cheap and good (just make sure there's no lard!)

I'm amused by the all the answers given to this Q. Looks as though all the meat eaters consider vegetarians to be some kind of crazy people.
I gave up eating all meat (by meat I mean ALL meat - beef, pork, mutton, chicken, all sea food, 36 years ago, and am none the worse for it, in fact I'm much healthier than I ever was.
What do I eat for breakfast, lunch & dinner?
I start off the day with either
a. Idlis (steamed rice cakes) and vegetable curry with pulses or chutney, fruits and fruit juices, milk.
b. Dosas (again a shallow fried rice pancake) with chutney made with coconut / pulses, fruits and fruit juices, milk.
c. Cornflakes with milk, bread/ buns with butter & honey, fruits & fruit juices , milk.
d. Upma ( a S.Indian dish made with coarse wheat flour, vegetables) with Curds, fruits & fruit juices, milk.

LUNCH
a. Dry chappatis (something like tortillas made with wheat flour) with either dry vegetable curry or with gravy, some rice with curry containing lots of vegetables, salads and plenty of curds.

DINNER
Same as for lunch but finished off with some dry fruits like almonds, cashew nuts, peanuts, prunes, pista etc.

Keep wheat biscuits handy. Buy cucumbers, alfalfa, avocados and tuna. You can make at least three different types of sandwiches with alfalfa, cucumbers and tuna and nibble them with your wheat biscuits. If you have a cooler at work buy yogurt,
grapes, apples and peaches. Eating healthy does not have to be expensive. Then there are packets of vegetable soup that need hot water only.

For many dairy and egg-eating veg's, their diet is usually very similar to that of a meat eater, but for us, the "meat" is soy-based, but seasoned and prepared to taste surprisingly similar. Veg's, unlike most americans, usually get their daily requirement of fruits and veggies, too.
