Its all about the lifestyle and living conditions the people were in that makes them different.
THe rice is much different, north indians don't really eat much rice, the curries are different and depending on what religion you are, christian, hindu or muslim, depends on whether u eat chicken, mutton, or beef- 3 main meats. TOns of beans, egg plant, spinich,
Carbs- bread- w/o yeast, puri, chapati, and naan-- all main bread dishes, all of it is spicy- more so varies on fruit
south india has more fruit like jackfruit, mango, bananas, cocoanut, its a farm area so theres more fruits
north india has more sweets- tons of sweets
I'm from South india
-- not much of a difference except more veggis north and more carbs north- fruits and rice are from the south and very abundant
EVERYTHING is spicey :)

North Indian cuisine has masala or curry powder. North Indians eat more breads than South Indians where the staple is rice. Then again there are differences in different States of India. Keralites use coconut a lot while Madrasis don't. People in Andhra use more spicy hot foods. In places like West Bengal, almost everyone eats fish.

India is diverse not only in its culture but also in food. South indian food is mostly rice and lentil based while north indian food is mostly bread and lentil based. The spices used are also considerably different. If u visit a south indian cuisine dont forget to taste idli ( rice cake ) and dosa ( Indian pancakes ) . Naan ( spl bread cooked in clay pot ) with aloo Muttar ( Potatos and peas curry ) is a speciality in North indian cuisine. But as far as i hv experienced South indian cuisine menus includes north indian dishes too but the north indian cuisine ( in the US ) rarely serves authentic idly and dosas.

In North India chapathi or wheat bread is the main part of everyday food.In South India Rice is the same.

North India cuisine is unpallatable to westerners. To uneducated nose, it reeks of sewage and pond scum. When served "al dente," it can remove automotive primer and exterminate the ocean's whale population.
South India cuisine is what North India throws away.

Very generally, the North is meat eating and the South vegetarian. Southern is also usually spicier (heat) than the north. As someone else pointed out, it is largely a reflection of what is available in the region.

Soth has more tradition and more veg menus it is famous for Dosa Idli Sambhar Curry Rasam...
North Is mOre bread and non veg Naan lamb methi lamb vindaloo tandoori chicken
