The spinach with cheese is probably Saag Paneer. The rice is called Kheer. A good side dish is samosa (though time consuming to make), and cholay (chickpeas mix). I think you are talking about saag panir. Anyway, a lot of Indian side dishes involve chickpeas and lentils.

Aloo Matar
Ingredients:
2 medium potatoes boiled and cubed
2 cups frozen or fresh green peas
3-4 green chillies-slit a little
1 medium Onion finely chopped
2 tsp garlic & ginger paste
1/4 cup Tomato puree
1/4 cup oil
2 tsp cumin seeds
2 bay leaves
1/2 tsp turmeric
1 tbsp salt
1/2 tsp garam masala
1/2 tsp powdered red pepper
1 tbsp powdered coriander seeds
1 tbsp chopped coriander leaves, for garnish
Method:
Heat oil and add the cumin seeds and the bay leaves. When the seeds begin to splutter, add the onion, garlic and ginger paste and sauté till oil separates.
Add the tomato puree, turmeric, salt, garam masala, red pepper and the coriander powder, and stir-fry till oil separates. Add the peas, potatoes and the green chillies and sauté over high heat for 5 minutes.
Add 2 cups of water; bring to a boil lower the heat and simmer, for further 10-15 minutes.
garnish with the coriander leaves. Serve with chapaties or rice.
