I'm Lithuanian and I love it! But I think there are as many recipes for borscht as there are Russians, Slavs, Balts, Jews, Poles....
In Lithuania it's served with tiny whole boiled potatoes on the side.

Beet soup, or Barscht in Polish (yes, with an "a") is a real treat. It is especially good if served with meat filled pierogi.

I'm of Russian descent, and I also love it...but I really don't think it matters where I come from. No one else in my family likes it.
Beets are a great source of iron!
