Thanks. Yes I know how to use a search engine - I was really hoping for family recipes or favorite recipe sites. Something a little more personal than a Google search.

I really like this recipe for black bean soup!

Black Bean Soup

• 1 pound dried black beans
• 1/4 cup olive oil
• 1/4 pound bacon
• 1/4 pound diced ham
• 4 onions, chopped
• 4 garlic cloves, minced
• 3 stalks celery including leaves, chopped
• 1-1/2 cups uncooked brown rice
• 1 teaspoon cayenne pepper
• 2 teaspoons ground cumin
• 3 quarts chicken broth
• 1/4 cup dry white wine
• 1/2 cup dry sherry
Wash black beans, cover with water and allow to soak overnight; rinse; drain; set aside.
Pour oil into a large soup pot. Add the bacon, ham, onion, garlic and celery. Cook at high simmer until vegetables are soft, about 30 minutes. Add beans, rice, seasonings, and broth to soup pot. Bring to a boil; reduce heat, cover and simmer 2-1/2 to 3 hours.
Let soup cool; put through the blender a little at a time, until smooth. Return to soup pot; reheat on low about 45 minutes, adding wine and sherry. Serve hot.

I make a pot every two weeks for my son who is a vegan....

1 small bag of black beans *soaked or unsoaked
1 large yellow onion
6 garlic cloves (i use a garlic press)
1/2 tsp. cumin or camino
1 tablespoon of garlic salt
1 tablespoon of chili powder (add as much as your taste allows)
pinch of cayenne pepper.

Simmer all day for unsoaked beans, adding water when needed.
Simmer about 3 hours for soaked.

I have found that the unsoaked recipe tastes better..not sure why.

Other variations are adding japoleno pepper (seeded).

You can also make bean soup:

Soak small bag over night.

Simmer for about 4 hours, drain juice. Add water, about 10 cups (at least half high covering the beans and add the same spices, omitting the cumin.

Add carrots, onion, 1 stalk cerlery. Simmer until done.


*these recipes aren't written down for me, i just cook them a few different ways, however, the best one is the first recipe.

Black Beans

INGREDIENTS:
2 cups dry black beans, soaked overnight
1 onion, chopped
1 green bell pepper, chopped
5 cloves garlic, chopped
2 bay leaves
1 tablespoon salt
1 tablespoon ground cumin
1 tablespoon dried oregano
1/2 cup white cooking wine
1/4 cup distilled white vinegar
1/4 cup olive oil

DIRECTIONS:
In a medium stockpot over medium-high heat, cover beans with water and cook with onion, green pepper, garlic, bay leaves, salt, cumin and oregano. Boil until beans are tender, about 1 hour. Add water as necessary so that the beans don't dry out or scorch.
When beans are cooked, stir in wine, vinegar and oil.

This is a cut and paste of my answer to another question about black bean sauce. Hope you would enjoy it!

<<<<<<< Stirfired Chicken with Blackbean Sauce>>>>>

300 g chicken thighs (boneless, sliced), marinated with soy sauce + sugar + cooking wine + garlic powder + corn starch for about 15 to 20 minutes, set aside
1 onion (chopped)
1 green bell pepper (chopped in to small cubes)
30 cc of water / chicken soup
sesame oil

Black Bean Sauce:
1 clove of garlic (crushed)
1 slice of ginger (crushed)
1 or 2 small chilli (chopped finely)
1 tablespoon of black bean Sauce (or chopped black bean)
1 teaspoon of sugar
2 teaspoon of cooking wine

1) Mix the ingredients of black bean sauce into a paste
2) Heat a frying pan or Chinese wok to real hot, add cooking oil
and stir fry the onion quickly for 1 minute, then add the black bean paste into the pan/wok and stir fry quickly till you smell the fragrance.
3) Add the chicken thighs into the wok, stir fry for 1 minute, add cooking wine to make a flame, stir quickly then add water / chicken soup, stir fry till the chicken is cooked, dry the taste if you need to add some salt or soy sauce

4) Add the bell pepper to the wok, turn off the heat, add a few drops of sesame oil (to make your food shiney), stir well, then serve on the plate

BLACK BEAN SOUP one million lb black beans, soaked eight cup water two tablespoons salt one million cup onion, chopped one million cup inexperienced pepper, chopped one million cup celery, chopped one million cup carrots, chopped eight tablespoons olive oil 6 garlic cloves one million tablespoon cumin four teaspoons white vinegar one million teaspoon soy sauce Simmer beans in water until tender. Saute onions, pepper, celery & carrots in olive oil til the onions flip golden brown. Add garlic, cumin, vinegar & soy sauce. Cook, stirring for three mins. Drain approximately one million/two c water from beans and upload it to the saute. Cook over a low warmth for half-hour. Combine greens with beans. Cook for one other half-hour, including extra water if essential. Just overlook the vinegar.
