My boyfriend is a vegetarian and i want to surprise him with dinner tonight... any good recipes that i could make for dinner for me and him?

As my old friend put it, I'd be glad to go on a vegetarian diet if only I could get a vegetarian or two to volunteer!

Seriously, though; why not ask him what he wants, because he may have specific restrictions beyond not eating what you would consider meat. Some people go so far as to say no animal products at all, which would mean no eggs, cheese, milk, or anything made with even traces of those things. Gelatin is made from an animal byproduct. On the other hand, some people consider themselves vegetarian if they don't eat land animals, but will eat fish and seafood. Go figure.

Frankly, I would not be in too big a hurry to accommodate this guy. Vegans do NOT usually eat enough protein, and the brain needs protein for proper functioning. So not to put too fine a point on it, he is not going to be the brightest bulb on the Christmas tree.

Thai Pineapple Fried Rice

Serves: 4
Cooking time (approx.): 4 minutes
Style: Thai Vegetarian

2 tablespoon(s) oil
2 teaspoon(s) finely chopped garlic
2 spring onion(s) chopped
1 cup(s) pineapple pieces
2 tablespoon(s) green peas blanched
2 tablespoon(s) raisins soaked in a little water
1 teaspoon(s) red chilli powder
1 teaspoon(s) freshly ground black peppercorns
4 cups steamed rice
2 tablespoon(s) soy sauce
a pinch of sugar
salt to taste
fried cashewnuts to garnish.


Heat the oil in a wok. Add the garlic and fry briefly till soft. Next add the chopped spring onions, pineapple pieces, green peas and raisins. Continue stir-frying on medium-high heat for about 2 minute(s) or till the onions are transparent.
Mix in the rest of the ingredients and toss well on medium-high heat for about 2 minute(s).
Garnish with fried cashewnuts.
TIPS:

Rice should be cooked such that the grains are firm, well-separated and not overcooked.
It is best to prepare the rice in advance. This helps in separating the grains.
Serve hot

I go online and get recipes all the time. Just type in pasta recipes and you'll have tons of pasta dishes. Vegetable recipe and that will give you a large assortment of recipes.Good luck and I hope it turns out nice.Oh and don't forget tofu recipes too.Vegetarians eat that.

Wel l'm a vegetarian, and I pretty much eat a lot of pasta.

I'd make spaghetti with Veggie crumbles. you can get veggie crumbles in the frozen vegetarian section at your grocery store. they're just like ground beef, and with some seasoning, they taste just like ground beef.

then maybe a basic salad with tomato, cheese, green pepper, onion, ect.

some garlic bread on the side, and you've got a full dinner!

Marinated Multi-Vegetable Salad

1 can French style green beans (1lb.)
1can small peas (1lb.)
1 can white corn (1lb.)
1 jar pimento (chopped..4oz.)
1 cup chopped onion
1 cup chopped celery
1cup green chopped pepper
1 cup sugar
2/3 cup vinegar
1/2 cup oil
1 tsp. salt
1 tsp. pepper

Combine all vegetables...draining off 1 1/2 cups of the liquid from the vegetables...in a large bowl.
Mix together the remaining ingredients and pour over vegetables.
Combine thoroughly, cover and let sit overnight in refrigerator. Serve chilled.

This makes a lot (especially for two people). I took it to a family reunion and it was well received by them.

Tofu run-down. Get firm tofu. Wash, dice, season. Lightly flour and deep fry. Saute tomatoes, sweetpeppers, onion, garlic and scotch bonnet pepper. Add a cup of coconut milk, bring sauted seasonings and coconut milk to a boil add a bit of ketchup.
Add the tofu, allow to simmer untill a creamy custard is formed. Remember to salt to your taste. Serve with peas and rice or plain rice alone. Add your raw vegetables to make the plate look good. Enjoy

Pasta dishes are always great, but can get boring if you stick to tomato sauce all the time. My friend's husband made this one for us one night and it was great.

Clean and slice the following:
mushrooms
asparagus
onions
yellow, red and greed peppers

Mix with a small amount of olive oil and grill until crisp, tender.

Place one jar of sun dried tomatoes packed in oil in a skillet. Heat with garlic.

Mix tomatoes and vegetables with cooked pasta.

ASPARAGUS CREPES WITH MUSHROOM DILL-SAUCE
Serving Size : 2 Preparation Time :0:00
Categories : Main Dish Vegetarian
Amount Measure Ingredient -- Preparation Method

-----CREPES-----
1/2 c Whole wheat pastry flour
1/4 ts Salt
3/4 c Soymilk
1 t Safflower oil
-----SAUCE-----
1 tb Margarine
1 sm Onion, quartered & thinly
-- sliced
1 ea Garlic clove, minced
1 c Small white mushrooms, slice
1 tb + 1 ts flour
3/4 c Soymilk
2 tb Fresh minced dill
1/2 ts Dried tarragon
2 ts Lemon juice
Salt & pepper to taste
-----FILLING-----
24 ea Slender asparagus stalks

CREPES: Combine flour & salt in mixing bowl. Make a well in the centre & pour in the soymilk & oil. Beat till smooth. Heat a 6 or 7-inch skillet. when hot, pour in 1/4 c of batter & tilt skillet till it's evenly coated. Cook over moderate heat till lightly browned on the bottom. Flip & brown the other side. Remove & set on a plate. Repeat with the rest of the
batter, you should have 6 crepes.
SAUCE: Heat margarine in a small pot. Add onion & garlic & saute over moderate heat till onion is golden. Add mushrooms & cover. Cook till the mushrooms are limp & juicy. Sprinkle in the flour & stir till it disappears. Slowly pour in the soymilk, stirring. Bring to a simmer, then stir in the dill & tarragon. Cook at a simmer till the sauce thickens. Stir in the lemon juice & season to taste. Remove from heat & cover.
FILLING: Trim about 1/2-inch of the asparagus stalks & scrape off any tough looking skin. Cut stalks in half & steam till tender crisp. ASSEMBLE: Place 6 asparagus stalks in the centre of each crepe, letting the tips protrude from the top & overlapping the halved stalks in the centre if necessary. Spoon a very small amount of sauce over the asparagus. fold one end of the crepe in towards the centre & overlap the other end over it. Arrange the crepes, folded side down, in an oiled, shallow baking dish. Spoon remaining sauce evenly over the crepes. Bake in a preheated 350F oven until just heated through. Serve at once.
