Damn it's good, I had some at an Eastern Indian Restaurant. I want some more, damn it was good.

Just have it for lunch.
Here is an easy way to cook it.

One medium size chicken
Blend together this following ingredients: about 4 medium sized onion, 2 cm of ginger, and several pips of garlic.
Mix with water and turn into a paste the following ingredients: 4 tbsp curry powder, about 2 tbsp chilli powder, and one tsp turmeric powder.
curry leaf
1 stck cinnamon
2 pcs clove
2 pcs star anise
oil.

1. Heat oil in the wok, when oil is hot, put in the cinnamon, star anis, and clove, sautee it until fragrant.
2. Put in the blended ingredients, as well as the curry leaf if it is available. Then put in the curry paste. Put in the chicken. Add a bit of water. Let it boil.
3. When it is almost cook, put a bit of salt, according to your taste.
4. Simmer until cook.

Simple isn't it?

Yeah!! Make me some too. That is my favorite dish at the Thai Restaurant. Chicken Red Curry- 4 stars with Shrimp Summer Rolls and peanut sauce (drool). Yum!!

Chicken Curry Recipe

Ingredients:
2 tablespoons of vegetable oil
4 cups of chopped chicken (deboned and skinless)
1 medium onion (finely chopped)
1 tablespoon of crushed ginger
1/2 tablespoon of crushed garlic
1 packet of EasyCurry's Chicken Curry spice mix
1/2 tablespoon of salt
1/2 cup & 2 tablespoons of water
Finely chopped hot chile peppers if desired

Serves 4 - 6 people

Instructions:
1. Heat a non-stick pan under medium-high heat.
2. Add oil and let it get hot.
3. Add onions, stir, and sauté for 1 minute.
4. Add garlic, ginger, (chillies if desired), 2 tablespoons of water, Chicken Curry spice mix, stir, cover and sauté for 2 minutes.
5. Add chicken, salt, stir and cover. Reduce heat to medium. Simmer for 10 minutes. Stir occasionally.
6. Add 1/2 cup of water, stir and cover. Simmer for 20 minutes. Stir occasionally.
7. NOTE: If after step 5 the curry is very dry, then add an extra 1/2 cup of water.
8. The curry is cooked when the chicken is tender but not falling apart. Turn off heat. Serve curry on bed of rice or with Indian breads. Garnish with cilantro if desired.

Serve with the vegetable of your choice on the side. ENJOY !!!

Here's the recipe you can make it ..enjoy!!!!!

Chicken Curry

1 1/2 tablespoons flour
1 teaspoon salt
1/2 teaspoon black pepper
1 pinch chili flakes (optional)
1 1/2 lbs boneless chicken breasts, cubed 3/4 inch
4 tablespoons vegetable oil
1 yellow pepper or red pepper, diced
2 medium onions, diced
1 granny smith apples, diced
5 teaspoons curry powder
2 cups chicken stock
1/4 cup tomato paste
1/2 cup golden raisins
chopped cilantro or parsley (garnish)
cooked rice

Toss chicken pieces in flour, salt, pepper& chili flakes.
Heat 2 1/2 T oil in dutch oven or lge skillet.
Brown chicken well.
Add red pepper, onion, apple, curry.
Add oil if needed.
Reduce heat; cook, stirring frequently, until onion is soft& transparent.
Combine stock & tomato paste& add to chicken.
Add raisins; simmer, stirring occasionally,until chicken is cooked& sauce thick, about 25 minutes.
Can be served with chutney, chopped peanuts or almonds, scallions.

it's not that difficult to make.get you some chicken wings for example,dice some onions,little salt to taste,add a lot of curry powder that gives it the colour,taste and name.mix all together in a pot with a little water added,bring to boil for like 20mins,check for tenderness,add a little corn starch for thickness,let it boil for 5-10mins,once it starts smelling good it's ready to be gubble down
