Raymond Anderson's Okra Supreme
Adjust the amounts in this okra recipe if you're serving more than 2 people.
1/2 pound okra, cut into 1/2-inch rounds
1 small onion, chopped
1 medium tomato, chopped
2 to 3 Ritz crackers, crushed
1 egg
bacon drippings
1/2 cup shredded Cheddar cheese
Using med. heat, saute okra and onion in small amount of bacon drippings until crisp-tender. Add chopped tomato; stir, cooking, about 5 mins. Sprinkle on crushed crackers. Blend lightly. Cook about 5 mins.
Reduce heat. Break egg onto the mixture. Blend lightly until egg begins to congeal. Shape into a flat mound. Sprinkle grated cheese on top and slip under broiler until cheese melts.
Serves 2.

Okra is a wonderful veggie and keeps well in the freezer for any time to use. Cut off stems and to the size you want. In a little olive oil brown them and keep stirring as this will gets rid of the gummy stuff. You can add this to beef or lamb stews or as a side dish by adding some chopped tomatoes to it, salt and pepper and continue to stir, then add a teaspoon of tomatoe paste , after a few minutes it should be done.
You can also add cooked strips of meat of chicken, beef or sausage to it .

Okra can be added to mainly any dish to absorb flavor and add texture but that slimy factor does make it a little disdainful, the best way to take away most of its sliminess is to blanch is in a hot pot of water for a few seconds and strain it out, then you can do what ever you want with it.

I once had a recipe for an Okra dish and it turned out awesome.
Okra, garbanza beans (chick peas), chili powder, black pepper, chopped onion. Sautee in olive oil until the okra is cooked.

okay... i like it malaysian style...
slice 10 okras at an angle and throw away the end with the stems. how thick? depend on how you like it...
blend a table spoon of anchovies/dried shrimps with 2 pieces of shallots, 4 pieces of garlic, 2 pieces of red chillies. if you don't have anchovies or dried shrimps, you can replace it with oyster sauce but the taste won't be the same...
heat up cooking oil in a pan and put in the blended paste. then put in sliced okras and mix/stir them together. add salt to your taste. when the okras start to soften put in 2 eggs and scramble them together...
once the eggs are fully cooked, it's ready to be served.

okra ie;ladys fingers can be cooked in various ways but my favorite is deep fried for about 1 minute then dipped in a paprika and chilli powder mix then grilled for about 1 minute
