i'm getting a couple boxes of sea urchin today but i won't be needing it unitl tomorrow. will it last in the fridge overnight and still be fresh tomorrow?

Uni can be kept for 5 or 6 days in the refrigerator. It is important to wrap with saran wrap so it doesn't dry out. You can freeze the uni for a few weeks, but it will lose its firmness when defrosted.

Uni can be kept for about a week in the fridge. Use cling-film or saran wrap to keep the air out. I always eat it within 3 or 4 days when I bring extra home to put in my fridge!

I have to agree it should last a few days, with seran wrap so it doesn't dry out. I get it straight from the ocean, my man dives for Urchins in the winter in Maine :-)

Until the early morning or very early afternoon at the latest. It might be okay to eat it after that but I'm sure it won't have a pleasant taste.

I would chill it (if you have temp control) just below freezing... its easier to slice then... also sashimi should really be eaten fresh!
