Chirashi Sushi
The last thing you might expect when talking about sushi. This is simply rice laid in your bento box or bowl with vegetable and seafood on top or mixed in.

Nigiri Sushi
These are the easiest to do as they are simply pressed rice with stuff layed over it with wasabi in-between. It was also the first thing I tried after knowing how to prepare my seafood for sushi and the sushi rice mixture.

Make Sushi (Mah-ke)
A mix of rice, seafood and vegetables that you mold in bowls or into squares. Top it with tamago and other stuff.

Fukusa Sushi
Take the make sushi squares you made and instead of topping them, wrap in a sheet of tamago then use some nori like a ribbon and ginger to garnish.

Oshi Sushi
These ones are so cute to look at. They are made by putting rice in an oshi waku which is a wooden box made for this. You mix layers of rice, vegetables, omelet (tamago) and seafood with some wasabi spread over the rice. This kind os sushi also incorporates seasoning, which is a rare thing.

Maki Sushi
This kind of sushi adds a level of complexity to the sushi by having to roll the mixture in a sheet of nori. Maki sushi can contain more ingredients though.

Futo-Maki
These are made like the maki sushi, except they are bigger. Also known as thick rolls. Don't try to put these rolls in your mouth.

Saiku Sushi
This is where sushi really becomes an art form. Bowls of sushi rice mixture are tinted in different colors. As sushi is made from this rice, you arrange the colored pieces to form a pattern or image.

Sashimi
From a newbie's view, this might look easier to do than maki sushi and nigiri sushi. But the simple look of the a well made sashimi plate only hides the talents of a more experienced chef as sashimi making requires a lot of knowledge. Mmm... this ain't even sushi anyways.
