They should be sweet if they're Vidalia onions.

However, I have noticed that the Vidalias are less sweet than they used to be.

Maui onions are very sweet, sweeter than Vidalia.

Also, you can "sweeten up" onions by slicing them and placing them in a little acidulated water for an hour or so. (Acidulated water---add a little lemon juice to water.)

Maybe they are not true vidalia onions. To be labeled a vidalia onion it has to be grown in Vidalia, Georgia. Here is a site where you can buy them.

I dunno fresh Vidalia Onions (I live about an hour or so away) are kind of tangy/sweet/and mildly spice and make the best homemade onion rings and Blooming Onions. I don't know reasturants though, I guess because I live close enough.

You cook the onion or dry freeze it and it looses a lot of flavor

Why not ask your local restaurant where they get their onions?

because resturants dont have time to slice them to order and if you slice yours and cover in the fridge for about two hours it too will loose the heat.
