Unfortunately, it depends on where you are as to what kind of ingredients you can get. I went to NY to visit my son and he wanted a pot of Chili Beans with Fry Bread ---- no problem I thought, jumped in the car and went to the grocery store -- you would have thought I asked for green eggs!! They had NOTHING not canned, dried, frozen -- nothing. About the third store I went to I found dried beans and ONE small can of mild salsa (yuck). So next time I went to NY, I BROUGHT the ingredients - if the Airport agents would have gone through my luggage, they would have had a great meal.
My suggestion (if you are not close to the SW) -- go online and just look. There are sooooo many recipes, but the ingredients might be the problem, unless you by them online.

Got a crock pot?
2-4 lbs pork roast, or pork loin (better flavor w/ bones, easier w/out)
a small jar or can of salsa Verde (I like Embassa or Herdez)
1 Tablespoon green Tabasco (more or less, depending upon heat)
put in crock pot, salt lightly and cook it for 5 or more hours on high or overnight on low, towards the end, break meat apart with two forks and stir to let meat absorb the rest of the juices.
Serve on warm tortillas ( I like Guerrero corn if very fresh, my husband prefers flour.
Garnish with: chopped white onion, chopped cilantro and a quick squeeze of lime. Avocados and tomatoes are nice too.
I usually set out the meat & warm tortillas in a covered caserole dish and let everyone "build their own" with whatever toppings each likes and a side of black or refried beans, fresh melon for dessert, it seems to go over very well.
Don't have time to cook? Just get a pre-roasted chicken from the grocery deli, strip it and use it in place of the pork, serve the green salsa and tabasco on the side.

cinnamon for garnish
1. put rice, cinnamon stick, and water in a saucepan. Bring it to a boil quickly. reduce the heat, cover it, and let it simmer until all the water is absorbed. (about 15-20 minutes)
2. add the milk an raisins. cook it uncovered until the milk is absorbed into the rice (10 - 15 minutes)
3. remove from heat, take out the cinnamon stick, and cover it. Let it sit for a few minutes. then sprinkle with cinnamon
you can serve the rice hot or cold, both ways are tasty.

Tinga
Cook either 1 lb. beef, chicken or pork-whatever you prefer.
Once cooked, shred.
Roast about 1lb of tomatoes, and a small can of chiles chipotles in adobo sauce. Blend with salt and pepper.
Slice 1 1/2 onions and saute in oil. Once translucent add the shredded meat, the sauce and just cook for some more minutes.
You can vary how much chiles chipotles you add, depending on how spicy you like your food. If once its done you still think its hot, you can add sour cream, thats supposed to take some of hte heat out.
You can eat the tinga with tortillas, quesadillas or on tostadas.

Enchiladas are easy and versatile. I'm vegetarian so I make Spinach and Pablano enchi's. I use canned sauce usually 2 red sauce cans and 1 green sauce. You can make it spicier with cayenne. Make it thicker with masa. Make some pico de gallo for a garnish. I use cucumber, cilantro, onion, jalapeno, roma tomato, lime juice. Just mix it all up and refridgerate. It's bad.***!
