I have heard it called General Tso's, Cho's, Szechuan sweet and sour. I know it has many, many names. But I am looking specifically for a recipe that doesn't use soy sauce or other soy products. thank you!

In different parts of the country it is called different things. Back east I had Tso's, in Vegas I had Cho's, in Frisco I had General's, in in Nor Cal It's called szechuan sweeat and sour and just szechuan. But to my taste buds it was all the same, spicy with a sweet taste too.

Just make General Tso's chicken and use a substitute for the soy sauce.

Here's a recipe for a substitute:

First of all, General Tso's chicken and sweet and sour chicken are not the same thing. You are probably looking for sweet and sour chicken though if you are looking for something that doesn't contain soy sauce. Sweet and sour chicken has a red sweet sauce that is usually served with batter fried chicken pieces, fresh belll pepper, pineapple and some times carrots. Not General Tso's chicken is batter fried but it is sauce coated afterwards rather than you adding the sauce seperately. It is also a spicier dish and contains a lot of soy sauce. Here's a recipe for sweet and sour chicken:

SWEET AND SOUR CHICKEN
Printed from COOKS.COM

2 whole chicken breasts - boned, skinned and cut into 1 inch cubes

BATTER:

1/4 c. cornstarch
1/2 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
3/4 c. cold water

SWEET AND SOUR SAUCE:

3/4 c. sugar
3 tbsp. ketchup
2 tbsp. vinegar (rice vinegar is best)
2 tbsp. cornstarch
3/4 c. cold water

Heat oil in electric skillet or frying pan to 375. Put chicken into batter and place in oil. Turn once and cook until golden brown - approximately 1 minute. Drain grease and place in shallow casserole dish.

Sweet and Sour Sauce: Heat sugar, vinegar and ketchup until sugar is dissolved. Add cornstarch and water. Cook 5 to 10 minutes on medium heat. After cooking sauce pour it over chicken and garnish with pineapple chunks and green onions and sesame seeds.

Very simple, not much of a hassle. Omit soy and add malted vinegar or just lemon juice, instead.
