Actually, while *most* fruits and vegetables are healthier raw, carrots are an exception. Lightly cooked carrots are more nutritious than raw because vitamin A is stable at all temperatures. And light cooking helps break down the cell wall somewhat, making the vitamin more easy for the body to reach.

Nutrient-wise, raw. Cooking takes out a lot of the nutrients. But cooked carrots taste better. Especially in soup.

Raw carrots contain 100% of all the nutrients carrots contain. Cooking them removes some of the nutrients, and adulterates some of the others. Always eat 'em raw!

Raw food is almost always better for you as the nutrients don't get cooked out of it.

Raw is better but you aren't losing too much by cooking them, unless you cremate them. Either way, your body won't absorb all of the vitamins and nutrients. Have them how you like, just have 'em!

Raw veges are generally healthier for you but there are some that are just really gross (I know I shouldn't be saying this) when they're uncooked. If you want to cook your veges, make sure to steam or boil them, as microwaving practically removes ALL the nutrience, which means you're basically eating fibre (still good for you...)
