"yam hed fang" - sour & spicy mushroom salad thai style

ingredients:
300 g rice-straw mushrooms
1/2 cup thinly sliced boiled chicken
1/2 cup thinly sliced boiled prawn
1 onion sliced
1 thinly sliced red spur chilli
2 tbsp. fried shallot

ingredients for the dressing:
2 hot chillis
1 tbsp. finely sliced garlic
2 tbsp. salt
1/4 cup lime juice

pound the chillies, garlic, and salt together until finely ground, add the lime juice, and mix thoroughly.

preparation:
1) wash the mushrooms thoroughly and remove any foreign matter from the bases of the stems. steam over boiling water for about 10 minutes; then, place in a colander and allow to drain.
2) put the mushrooms in a mixing bowl, add the chicken, prawn, onion, add the dressing, and toss gently to mix thoroughly. adjust the seasoning.
3) transfer the salad to a bed of lettuce prepared on a serving platter, sprinkle with the fried shallot and spur chilli, and serve.

Curries are easy. You can buy a tub of green, yellow or red Thai curry pastes. The directions should be on the tub.

If not, warm up a couple of tbs of the paste in a bit of oil over low heat.

Add 1 cup of coconut milk, heat again until fragrant.

Add another cup of coconut milk mixed with 1 cup of water. Heat. Then add sliced chicken (1/2 lb or so), thai eggplant or cubed regular eggplant and 2 tsps of fish sauce.

You could get more elaborate and add different veggies or flavorings such as kaffir lime leaves, Thai eggplant, straw mushrooms or chillis but the above is a basic recipe that'll tide you over.

Serve over hot rice.

"Pad Thai" is the easiest very common dish eaten in Thailand, it's basically flat rice noodles with 'stuff'.

The secret to great Thai food is great Thai pastes and sauces. You can buy red, green & yellow paste in little cans anywhere that has "Asian groceries", boil them with coconut milk and meat or veg of your choice and it'll be great.
