I know I should eat my veggies, but they taste so bitter. If there is a recipe that will cut down on the bitterness from them, that would help me out a lot.

Cabbage
1 package of bacon(chipped/fried)
3 large chopped vadalia onions
1 head of cabbage(chipped)

Fry bacon an onions together until bacon browns.
Poor in 5/6 cups of water.
Bring the bacon, onions and water together to a boil.
Add cabbage.
Boil for ten minutes
(If you are going TOTAL vegetarian, still include the bacon, but don't eat it. The flavoring from the bacon is what makes the cabbage REALLY amazing.)

Squash and Onions
3lbs. fresh squash (sliced)
3 or 4 large onions (any kind)

Spray frying pan to keep from sticking.
Sautee squash and onions until mushy. (about 30 minutes)
Add salt and pepper. (I like light salt and pepper.)

These are my faves. My mother concocted these through experimentation(they are straight from her head).

Baked sweet potatoes are really great and really healthy. Use nonfat butter substitute(I like the squirtable kind) with substitute sweetener and cinnamon.
Don't give up too quickly, I've found sweet potatoes to be very bitter myself, just keep adding stuff until you get the right taste. They DO get better the more stuff you add. Trust me.

My dad also enjoys cinnamon and sugar on mushy carrots.

A good thing to keep in mind is that vegetables make everything taste better. If you get a sandwich with meat on it, just pile on some green peppers, onions, and tomatoes(I love tomatoes). If you are planning on going total vegetarian, I am a BIG fan of tomato sandwiches.

Tomato Sandwich
Put mayonaise on two slices of bread and but two thick slices of tomato on the bread and put salt and pepper on the tomato.

There are some really great store brand vegetable packs that are REALLY easy to make. Experiment with different fried ocra that is already breaded. Also try different packages of cream and whole kernel corn.

I don't cook anything during the week that takes more than 45 minutes, I love Rachel ray, she has great recipes that all only take 30 mins or less and she has at least 6 cookbooks full of them the only problem is she calls for a lot of fresh ingredients so sometimes I leave out what I think isn't really necessary also she cuts and chops a lot of stuff so if you are not quick with a knife it may take more than half an hour. If you have seen the commercial on tv for the vidallia chop, that really helps cut down prep time. you can also try crock pot recipes, you jut put everything in the pot in the morning (or the night before and refrig overnight) and just let cook all day while your at work/school and dinner is ready when you get home. and last but certainly not least, if you have an outdoor grill they work great and cook quick you can grill steak or chicken or pork chops and do a quick and easy side, like rice or a noodle packet or salad.

Sweet and sour veggies over rice. You can buy prepackaged kits with different flavors of sauce in the freezer section of the grocery store. You could also add veggies to vegetarian gravy and toss them in a pie shell- basically a pot pie without the meat. I'm trying to think of some of the ways I manage to get in a few veggies as I hate most of them as well. Don't forget to include veggies that you do like- potatoes, carrots, peas and corn all taste good when steamed or boiled until tender. You can even add a bit of sugar to the cooking water. I wouldn't even think of eating raw vegetables. I can barely stomach lettuce even when covered in dressing. :)

Oh- something that is surprisingly good which I never make myself, but my mom does- she adds turnip to her mashed potatoes. It has a great taste. A vegetarian cabbage roll might be nice as well. What about cole slaw?

Buy yourself a wok and stir fry your life away.
Broccoli.brussel sprouts,snow peas,green peas can be all cooked in minutes in a wok.You can add diced almonds to them to give a nutty taste and that might entice you to eat veggies.

I make a smoothie in the mornings. Reallly good. Try it ONCE before you hate, you can adjust it to fit your taste but it's FANTASTIC, and by the way I HATE most veggies, including the ones in this recipe... lol'
Smoothie:
Fresh broccoli, fresh spinach, frozen berries ( I use strawberries), and banana. Add 100% juice to taste (I use carrot, but you could use V-8 Fusion http://www.v8juice.com/fusion.aspx, or another fruit juice...)

Add some carrots to meatloaf, onions to potatoes, mash up broccoli or cauliflower, etc.

juice em with fruits...or buy v8 splash. You'll get both your veggies and fruit servings.

Jerry Seinfeld's wife, Jessica Seinfeld, just wrote a book about how to blend up veggies and put them in recipes, so that they are hidden. That way, you are getting the necessary veggies without the taste. The book is called "Deceptively Delicious".....
