I have heard very conflicting statements that state either time for this tradition to be done. In many other cultures they have food to be eaten on the eve, midnight, or the day. Does anyone know the "real" way this southern tradition should be celbrated and why?

Cali,
The tradition is what it is. The concept of the of the beans and collards were and are a way of hope for the New Year. Especially during a time when people didn't think that there was anything to hope for.
So, being the ever persistant southerners that we are, we hung onto a tradition and it has proven to help some and make others believe as well.
My familys' tradition, like so many others, is to have a a portion prepared for each family member on a special dish at the strike of midnight. Not to be made full, but to enjoy each others company and to wish for a prosperous upcoming year.
I hope this little journey into my family history.... helps to answer your question.

My family individuals traditions (it is an extremely reliable custom -extraordinarily much faith) is they are eaten the 1st day of the hot year. the clarification could be that the dish is symbolic of what you opt for to obtain for something of the year. Peas = peace for the family individuals Jowls (hog jowls) = wellness for the family individuals Rice = riches for the family individuals

My older Sister said it is eaten on
New Years Day for good luck.

alot of people from the south eat black eyed peas on New Years for money

They should be eaten on New Years day and are suppose to bring you luck. We usually eat them with collard greens and ham hocks.
