You'd have to ask the particular restaurant if they have any vegetarian dishes. Just asking for meatless doesn't account for any meat products that they use in the sauces.

I have anything but the beef dishes ... of course I am a flexitarian vegetarian. We are "normal" and healthy.

Some chinese places have a vegetarian (and quite often most options on it are vegan) list on the menu.
There's a place near my work that has a pretty long list of tofu (bean curd) dishes. There's kung pao bean curd, ma po bean curd, broccoli & bean curd with garlic sauce, sesame bean curd, etc etc. All the favorites but vegan and animal friendly.
Unfortunately, a lot of places don't have that, so you can go with old favorites like spring rolls or vegetable egg rolls (if you eat eggs) and vegetable fried rice (you can ask for no egg if you don't eat it), veggie lo or chow mein (one of those has egg noodles, I can't remember which off the top of my head), broccoli with garlic sauce, and so on.
Read the menu and just ask if there's any fish or oyster sauce in whatever dish you're wanting.

I love broccoli, sesame seeds and garlic sauce so sometimes I ask for the Beef and Broccoli dish without the beef, but with additional broccoli and some other veggies. It's great.
I also like vegetable lo mien. It's the best!
You can order almost anything without the meat. Some restaurants even have tofu as an available substitute.

I wouldn't trust most restaurants in general to customize a dish for me and make it vegetarian- you can ask if they have any dishes that are vegetarian. Spring rolls are often vegetarian, vegetable fried rice perhaps...
