Rice almondine

1 md Onion, chopped
2 ts Butter
1 1/4 c Chicken broth
1 tb Lemon juice
1/2 ts Garlic powder
1 1/2 c MINUTE (R) Instant Brown
Rice
1 c Frozen green beans, thawed
2 tb Toasted sliced almonds
1/2 ts Dill

1>. Cook and stir onion in butter until tender. Add broth, lemon juice and garlic powder. Bring to boil. 2>. Stir in rice. Return to boil. Reduce heat to low; cover and simmer 5 minutes. Remove from heat. 3>. Stir in green beans, almonds and dill; cover. Let stand 5 minutes.

I think I would do a simple rice pilaf. Put 1 Tbs of extra virgin olive oil and 1 Tbs of butter in a pan and heat over medium heat. When the butter is melted, put in 1 chopped shallot or 1/2 onion, diced and the rice. Stir to coat the rice. Replace the water with chicken broth and cook as you normally would any rice. Throw in a handful of parsley and a tablespoon of unsalted butter after it has cooked completely.

At the restaurants, I have seen it served with spinach mashed potatoes (the spinach is in stirred into the potatoes), as well as angel hair pasta tossed with lemon and butter. I would say either of these would be a good choice.

steamed broccoli or asparagus. You need something green to balance the protein and the carb/starch. Anything green that you like, i.e., peas, spinach, brussel sprouts would be good. When I was little, my grandmother always fixed peas with chicken and mashed potatoes, so I still do that sometimes too. It may be old-fashioned, but it's good. Use frozen peas, though, not canned, add a little kosher salt, a dash of white pepper, and lots of butter or margarine...

Take a can of chicken broth or use a powdered or cubed type of boullion. Use 2 cups of broth or boullion to cook 1 cup of rice in. Add spices that you like, parsley is nice as is paprika.

Fettichini alfredo is a great side. Add a caesar salad with
italian bread and herb dipping sauce. What time shall I be there. This is my favorite.
