VEGAN STROMBOLI

Difficulty: medium
Cooking Time: 50 minutes
Servings: 4 people
Ingredients:

♥ 500 g (4cups) wheat flour
♥ 20 g yeast (1 3/4tbsp) (for making bread)
♥ 3 tablespoon olive oil
♥ 100 g (1 1/4 cup) seitan
♥ 20 g spinach (approx 1/2 c)
♥ 100 g mushrooms (approx 1 1/2c)
♥ 1 garlic clove, minced
♥ 4 tablespoon fried tomato
♥ 200 g soy cheese (8 0z)(no dairy products) [we’ve used “Edam” for melting]
♥ parsley
♥ salt
♥ olive oil for cooking
♥ sesame seeds (optional)

Put flour in a deep bowl, make a hole in the center and put the yeast. Add 1 cup of water and let settle 15 minutes.
Add olive oil and knead to form a dough. Add more water if necessary. Let settle 20 minutes.
Preheat oven at 180º C (350F).
Wash and chop veggies and cut seitan into slices. Sauté vegetables with some oil, garlic, parsley and salt.
Spread out the dough and form a circle of about 70 cm diameter. Spread fried tomato and put the vegetables, soy cheese and seitan. Roll it and form a cylinder. Seal borders. Put in an oven mold, paint with olive oil and sprinkle with sesame seeds. Cook 15 minutes or until brown. Serve hot.

I personally cannot, but a local vegan bakery/cafe has stromboli that's pretty good. But it is made with analogues.
