I am preparing food for a birthday party in January for 100 people. I have 6 inexperienced servers to carry out the plates and 2 additional helpers in the kitchen. My biggest concern is plating the three items (salad, pasta, peppersteaks). I want the food to be served hot so I don't want to plate too early, but then I don't want guests to have to wait 20 minutes to get their food. What would be the best use of my two kitchen helpers? Overall, what is the best way to cater this event?

No amount of advice will help here = the fact that you are caring makes up for maybe not the best service. Train the people helping and keep the booze flowing and relax and enjoy the birthday. Or lay out a beautiful buffet and they can help themselves and so can you enjoy it. Good luck xx

Serve the food on hot plates will help keep the food warm. Have the servers in a line and take the plates out immediately. If possible use serving carts to move the food quickly to the guest. Possibly set up a serving station with sterno burners at the far end of the room to serve from both ends of the area keeping the food warm. The salad could be served onto plates and rushed out easy enough. Have fun sound wonderful.

Place bowls of salad and bread baskets in the center of the table and give each guest a chilled salad plate and fork - then heat the serving plates and serve 6 tables at a time with 16 tables you should be completely served in about 15-20 minutes. You can also utilize a heated cart if you have one or 2 available. Allowing guests to self serve salad at the table (call it abondanza - "family style") is fine and since many people don't eat some kinds of salad it reduces waste. Good Luck!
