If you're not having any fun, you're not doing it right. Plan ahead, be organized, do as much cooking and preparing well ahead so you are only doing finishing touches in the kitchen. Use disposable plates and cutlery if your stressing about cleaning up and leave most of the big cleaning up for the next day. I usually make a space in the kitchen to stack stuff up and then I deal with it later.

If you find that you're just stressing too much during the party to enjoy it, splurge a little. Have some or all of the food catered. Hire someone to come in and do the serving and cleaning up. Put an ad on Craigs List and I guarantee you'll be able to find someone who is a waitress/waiter, or works for a catering company and could use a few extra bucks doing a side job one night. My mom used to do this all the time and for $50-100 she had someone else worrying about the spills and refilling the ice bucket so she could be with her guests.

And the most important thing is to relax. These are your family and friends, they will understand if everything isn't perfect and they will probably be more than willing to help a bit so you can enjoy it. You aren't curing cancer, you're just throwing a party, don't make yourself insane.

The host has been stressing and planning and then continues through the party to make sure everything is absolutely perfect and that everybody's having a good time. Then there are the small things like the trash bag is full, somebody tells you the bathroom's out of TP, someone else broke a wine glass, and the cat barfed up a furball in the hallway. Think of the host as a manager and the guests are the customers.
