You could eat food. And endless varieties of it. Honestly, most people recycle the same 8 or so dinners over and over again, so it's not like the standard American diet is all that varied. If you're willing to cook for yourself and you're open to trying new things, you can have a far more varied and interesting diet that most of your neighbors. I heartily recommend "Vegan with a Vengeance" by Isa Chandra Moskowitz for an intro to delicious, cheap and easy vegan eats. Her other cookbooks are great too ("Veganomicon" has a lot of good basic info like "how to cook a bean" and "how to cook a grain" which is great for people who aren't yet comfortable in the kitchen.)

As far as getting your nutrients, it's all available with the exception of B12, which must be supplemented. If you make sure you're getting what your body needs, it's a very healthy diet and your chances of developing some of the biggest killers (like heart disease, certain kinds of cancer, and diabetes) are sharply reduced on a plant-based diet. A good volume on vegan nutrition is "Becoming Vegan" by Brenda Davis and Vesanto Melina.

I am a vegan for passed 8 years, my wife and two kids (4 y/o & 8 y/o) are vegans for life. I can tell you all the advantages being a vegan, physically, emotionally and intellectually.

In V&V, there are plenty of them confessed being a vegetarian / vegan much longer than me, and some ever since they born. Indeed they are much greater than us and should salute them.

We may differ by religion and faith but whatsoever difference we may have, one thing is definite.. we are saving thousands of lives, condemn cruelty, violence, slain and....

The four living creatures [animals] around the throne of God also speak and are rational beings. One of them is a lion, one a bull and one an eagle [Revelation 4:7]. In Isaiah 43:20 we read:

“Even the wild animals will honour Me.”

When we realize all these significant facts - how, then, can we insist that it’s all right to kill and eat all the living souls who are identical to us in almost every respect? Genesis 9:5 also alludes to the fact that animals will also be held responsible for their evil deeds:

“And for your lifeblood I will demand an accounting. I will demand an accounting FROM EVERY ANIMAL and from each man too.”

I am a vegan and this is what I ate today:
Sprouted wheat bagel with EarthBalance Buttery Spread (Vegan), Orange juice, and a cup of Kombucha Yogi Green Tea. Then I went for my usual yoga class (yesterday I did my 5 miles on the treadmill to keep up over the winter for my marathon training to start up outdoors in the spring -or summer? whenever the temp is above 40 degrees outside!).
Then I had a curried vegan chicken salad from WholeFoods - which has pieces of seiten (wheat gluten meat), vegan mayo, almonds, raisins, celery, alot of spices, and I washed it down with a POM (pomegranite juice). For a snack I had chocolate rice milk (Good Karma brand - I like to have rice milk since I already eat alot of soy stuff/tofu), an apple and banana, and I like to eat plain wheat tortillas (organic of course). For dinner I had tofurky italian sausages cut up and sauteed in oil and put into my spaghetti noodles and tomato sauce, and petite peas on the side. Oh yeah, I snuck in a Zenisoy Chocolate pudding somewhere in today too (but don't tell my kids cause they are suppose to be only for them, but they are so delicious!). My daughter is making Almond Biscotti from my vegan cookbook, so I might have to taste test those tonight before bed, or be a good girl and eat it in the morning like I should. So that is what a vegan ate today.

you can eat anything that comes from the earth. when it comes to what you can't have...remember, it's not just flesh that you can't eat, but anything produced by an animal as well. you can't use things like honey and butter even though an animal didn't die to make it.
you can always have lots of grains veggies and legumes. tofu is also very versatile.

Anything that isn't animal -based. That means everything except meat, eggs, dairy products like milk or cheese, honey... oh, and Jell-O would be out because it's got animal gelatin in it.

Food. It's not really THAT difficult--fruits, veggies, grains, nuts, and beans. And there are more and more vegan products available so you don't have to deny yourself of treats, if you are so inclined. There's vegan ice cream, vegan baked goods, vegan candy, etc. Granted, you should limit your consumption of that, but you don't have to really deny yourself.

Vegan meat & dairy substitutes:

Many products in mainstream grocery stores just happen to be vegan. See: http://www.peta.org/accidentallyVegan/

You could also eat fruits, vegetables, beans, nuts, and grains.
