Sugar snap peas, but if they don't like snow peas they are unlikely to like snap peas they are very similar.

Celery stalks, sliced diagonally 1/4 inch thick. The celery slices will give the dish the same crunchiness as snow peas. Another substitute is chayote, a light green vegetable that has no taste of its own, but is very crunchy.

Green beans are as close as you will get. Unfortunately its not the same. I would try to find frozen ones if you can't find fresh.

fresh green beans, asparagus, or use something everyone likes, maybe broccoli, carrots, bok choy, cabbage, green bell pepper, I use all of these when I cook Asian food.
