General Tso's Chicken. I use this dish as my "benchmarking" dish when I try a new Chinese restaurant, to see how their's compares to other Chinese restaurants I've been to.
I also love Peking Duck, the real kind of Peking Duck. I've had this dish at the Spring Deer restaurant in Hong Kong. Awesome.

Usually Sweet and Sour Chicken, with Fried Rice, and Fried Wontons. Don't forget the Fortune Cookie, else I may not repeat business.
