In a self defense situation certainly the face bite could be there, even easier to grab an arm (since he's trying to hit you it ties up one arm and you do damage) and bite a chunk of flesh out. Eye gouging, fish hooking, grab & tearing an ear, etc. are all legitimate defenses and most likely will take the fight out of your attacker.
If the attacker is in your guard or has you mounted (the typical ground and pound positions) you can grab an arm/pull an elbow in of your attacker to get a quick reversal. While pulling an arm in (of your attacker) you make him "round" on that side (think of taking one leg out of a table). You then do a directional bridge. Plant both feet and begin with a traditional bridge to "pop" your attacker up but finish it by pushing with one leg in the direction that you have an arm isolated (the side you made the attacker "round" on) for a near effortless reversal.
With a little practice you will be able to isolate the arm of your attacker immediately and sweep him without him being able to do any damage to you at all. (when you practice this for the first time look at your partner's eyes for the look of surprise at how easy it is to get the reversal)

A. Get some grapling skills, there are so many things you can do to get out of it with just some basic moves. If you know nothing else you can always just grab the person and hug him to your body so he can't punch you and hold him until he moves or until help arrives
B. Give up, if you have no idea of what to do on the ground, give up, maybe they will have mercy on you and not pound your head into the pavement too much
C. If you try the top two options THEN you can do stuff like bite the guys nose otherwise if you bite their nose and it just pisses them off more option B will not be an option anymore
Ground and pound is easy to defend especialy against a person who is inexperienced or someone who just got on top of you by accident, a few lessons in any grapling art and some sparing and you'll start throwing people off left right and centre

Ground and pound is not as affective against an experienced fighter unless that person using it has some kind of other wrestling or ju-jitsu background to go with it. In an actual fight you are right in thinking of that and it is certainly one of the ways you can defend yourself against them along with gouges to the eyes. Not only that but it also makes him support your weight and tires him out more if you can hug him and keep him tied up for a bit while you weather the storm. In the stand up situation low kicks to the knees and groin are good along with elbows to the face and finger strikes to the eyes and palm heel strikes under the nose, knees to the groin, stumps to the foot and bridge of the ankle when close in and they have tied up with you.

An active guard,good posture,keep the top fighter close,keep the over and under hooks locked,turn into the side he tries to pass,and a good submission game because while he's swinging and getting excited you can get ahold of something like an arm or triangle choke or even a transition to get you on top

pulling them down is a good idea
it keeps them from posturing up and getting a lot of force behind the punches
the best thing to do obviously is to not get taken down, but thats hard to do if fighting someone with good take down skills
rotate your hips and try to either get into a guard position or even better try to escape to your feet or just get them into a less dominant position
try using short elbow shots with the sharpest part of your body the elbow right on the face or the head
this will allow you to scurry up to your feet or if lucky knock them out from the bottom

Cover your head, work your hips out and look for an escape/reversal. This also depends what position (full mount, north-south, side control, half guard, full guard) the Ground and Pounder has you in.

if he's in the mount (straddling your midsection like a horse) position turn on your side to a 45 degree angle to your right, put your left hand over your ear like you're answering a telephone and put the pinkie of your right hand on the pinkie of your left hand. if he's rushing you when you land on your back pull him into your guard (wrap your legs around his midsection) go under his right arm with your left hand and over his left shoulder with your right hand and lock your hands together.
