Consider the following that haven't been mentioned, but are classics in their right:

"Malaguena"
"East of the Sun"
"Hotel California"
"The House of the Rising Sun"
"Guitar Boogie"
"Under the Double-Eagle"
"The Orange Blossum Special"
"The Breeze and I"
"Windy and Warm"
"Honky-Tonk" and their variations
"Amazing Grace" in harmonics

The list is endless if only you look.

I also have to say Canon Rock by JerryC. Look it up in youtube and I'm sure you'll love it and its many covers. It's a little difficult but it's well worth the practice.
