Very cool thing to do. Is it alcoholic?, i suppose banging it in the fridge will make it last longer. I tried making my own beer once, it turned out flat and had bits in it! yuk!

Is that the recipe with condensed milk, chocolate topping, whiskey etc? it is soooo yummy, my mum used to make it every xmas. Just keep in in the fridge, only make fairly small quantities at a time and drink it really quickly before it has a chance to go off!!! It will keep about a week in the fridge.

EDIT: And ignore the post above which suggests microwaving it - the eggs will curdle and cook and you will be left with lumpy, sweet scrambled eggs...uuugggghhhhhh!

Great question. My Irish girlfriend makes it every year for Christmas gifts. We always know what we are getting and look forward to it. (She doesn't call it Bailey's - she calls it O'Keeffe's because she makes it). I know there is no problem keeping it from a few days before Christmas until New Year. Never any left after that. Everyone loves it.
My problem is trying to keep some until New Year.
I keep mine in the refrigerator.

Below is a link to Top Secret Recipe's formula for Bailey's. It doesn't have any eggs, but it says to refrigerate it due to the evaporated milk in it. I'm sorry I can't help more.

Try a short blast in the microwave. Should kill off anything in it. Just test a very small amount, and it'll probably be best to microwave before you put the alcohol in it. It'll probably be best making it fresh everytime anyway. Either that or up the alcohol content in it because alcohol is a natural preservative. Any chance we can have your recipe??

It would depend on the lifespan of the eggs and cream when you used them, I would have thought it would be ok overnight but wouldn't risk it much after that.
