I've always wondered about pasteurization, and while I know what the process is I still am unsure of some things. Sometimes I leave pasteurized juice out of the fridge at night and throw it back in the fridge in the morning, or drink it before I throw it in. Is this Safe?

Ideally, no. Most of us do that now and then anyway, though (even those of us who know better!). If you are caring for someone who has a suppressed immune system - so someone with diabetes or cancer or HIV (many other diseases too) - then this becomes very important to not do.

Otherwise, the pasteurization killed most or all of the bacteria that was once present on the fruit (no natural wine or vinegar formation here!) and you will likely have no ill effects other than nasty warm juice.

With juice you have a bit more leeway than milk. Pasteurization kills the bacteria so that the product has a longer shelf life. If it was fresh squeezed you'd be taking more of a risk.

you can get away with juice i do it all the time.
