A good book. Be it a few novels or a sudouku book, bring a few of these, to keep you busy. Bring your iPod or some other mp3 player; listening to music always helps to relax. You can also bring games- maybe ones in your iPod or a GameBoy or DS or PSP. Research your airline a bit- do the seats have screens? Some do, even in economy class, and you can occupy yourself watching the in-flight movies and other things. Talk to the people around you; you might meet some interesting people :]
Stretch. Stretching keeps your blood flowing, preventing clotting, and also keeps you a little bit refreshed. And if possible, sleep. The hours just fly by when you sleep (haha). Besides, you'll need to be alert so you won't fall asleep in the airport you'll be arriving at.

I spent 14 hours on a flight to Australia, there and back.

Bring snacks, watch the provided movies in your seatback, bring magazines, drink heavily(not alcohol, but feel free if you're over age), and try to sleep.

Depends on which direction you're flying. If flying from the US to Europe...SLEEP! If going the other direction, do what you can to stay awake. That way, when you get to your destination, you will be somewhat accustomed to the time zone and sleep normally at night.

.....take your address book and catch up with friends and family with handwritten notes, bring stamps and pop them into the nearest mailbox after your flight.
.....listen to a book on CD.
.....write in a journal.
.....watch four movies in a row with one of those handy mini DVD players the airlines rent out for in flight use.

kick the seat in front of you, or tell the person next to you all about your fear of frogs going into great detail. talk about the scenery when you saw your first frog, then when the plane lands tell him/ her that they are freaks and need to see a therapist, or some version of that.
