The best way to cut them in half without breaking them into several pieces is to cut them after you have boiled them al dente. Because you cook lasagna in the oven after you boil the noodles, you par boil them, meaning, not too soft. Because noodles keep cooking if left in hot water, once you've par boiled them, plunge them into ice water to stop the cooking process. Then, keep them in cold water until you are ready to use them. You can use scissors to cut them if you wish.
