Sorry i forgot to add that they need to serve only 3, and try not to have too many leftovers. Also healthy if possible :)

Also id like for the main dish to be a pasta, if possible.
Sorry for all these extra things i keep adding.

Thanks for all the replies so far
i now think i'll have some stuffed mushrooms as an appetizer, and maybe some mini lasagnas as the main course, then some sort of potato soup.
just salad and dessert left, or more suggestions for everything couldnt hurt either.

Appetizer
Caesar Salad
I usually use a bag "kit" but any Caesar salad will do.

Main Dish
Cheese Stuffed Shells
A family favorite. It freezes well too.

Breads
Fleischmann's Italian Bread
A crusty bread with a chewy, flavorful interior.

Condiment for Bread
Parmesan and Garlic Dipping Oil
Don't skip this! This is what makes the meal become a gourmet, fancy-restaurant meal!

Beverage
Cabernet Sauvignon Wine

Desserts
Tiramisu Trifle
A delicious, easy alternative to traditional tiramisu and it serves more people too.

Stuffed Mushrooms
Potato Soup
Green Salad with Vinegarette Dressing
Lasagna
Tiramisu, Panna Cotta or Granita

You had chosen items with an Italian theme for your appetizer, main course and soup so the dessert and salad suggested would go with that. The desserts here give you a variety to choose from.
Enjoy!

For appetizers you can serve a spinach dip with some crackers.
For soup, make a cheese potato soup.
For a salad keep it simple with just lettuce, onions, cherry tomatos and cucumbers.
Main course some chicken breast in some whine based sauce with caulifower mash and some asparragus.
The dessert you can just buy pastries at a near by bakery so you wont be overwhelmed with all the cooking.

Hope these ideas are helpful...

Appetizer Ideas: Hush Puppies, Tortilla Chips w/ Spinach & Artichoke Dip, Buttermilk Biscuits, Toasted Ravioli's, Stuffed Clams, Olives, Mini Quesadillas, Mini Crab Cakes, Shrimp rings w/ sauce, Twice Baked Potatoes, Stuffed Mushrooms, Deviled Eggs, Pasta Salad, Egg Salad, Potato Salad, Shrimp Salad, Garlic Toast, etc.

Soup Ideas: Vegetable Soup, Chicken Noodle, New England Clam Chowder, Corn Chowder, and/or Potato Soup.

Salad Ideas: Ceasar Salad, Chef Salad, Chicken Ceaser Salad or just provide the romaine lettuce, iceberg lettuce, egg, shredded cheese, red cabbage, sliced carrots, croutons, various dressings, cut up ham, cut up chicken, cherry tomatoes, and snow caps and let them make their own salad.

Main Course Ideas: You cannot go wrong with Lasagna. If you have vegetarians attending the meal, make a veggie Lasagna. Or, you can make Green Bean Casserole which is another family favorite. My grandmother makes Chicken Parmesian on New Years day.. I love it.

Dessert: Rice Pudding, Cheese Cake, Apple Pie, Pineapple Upside down cake, and/or Fruit Flan.

It depends on how much you are willing to waste on money or how is you cooking, no offense.

Its its my budget. I say

First = Baked sweet yam chips with apriocot dip and dusted sugar. Duck crepe with garlic aioli mayonaisse.

Second = Chicken noodle soup.

Third = Shrimp caesar salad with mesculn

Four = Fried cornish chicken breast, orange and balsamic glaze reduction, and fig stuffing.

Fifth = Japlopenos blueberry cheesecake (made with bree, and marcopone cheese)

I just made a menu off my head it might not work.
