You can get pictures of various saints from books. However, I believe cultures invent the images of many of their heros, to look the part of the character. Usually they resemble their creators. For example, if you needed an image of St Michael, you know he has a spear and holds down the devil, symbolizing the victory of good over bad. Michael comes in blonde, brown, black... is sometimes "beautiful", and sometimes buff. The maker of the image is looking for something/one to look up to, so it depends on their imagination.

Go check, the church canonizes people all the time.

They have saints of all ages from all times.

There are plenty of twenty century saints if that's what you're asking. Or at least enough around that we have pictorial evidence of them.
