I think she has an interest in me because I caught her looking at me, I looked back, and she looked away. With big smile on her face. Btw, knowing how late I work does not have any influence on mine or her work. Does this mean she wants me to ask her out or something? I appreciate any input on this.

she could be sending you signals about the whole work hours thing. if your gut tells that shes interested, then trust that gut man. Next time she asks you how late youre working, tell her what time and then ask her if shes maybe interested in doing something afterwards. be confident and to the point. well dont go to a movie. not on the first time you hang out. 2 hours of not talking? not cool. save that for later. how about bowling or pool? if you both suck, then you can laugh at each other. if you are good at one or both. hold back a lil bit (dont crush her) and show her some techniques. the conversation will come naturally. just go with the flow.
