if you ask the PC FPS snobs, you know, the ones who say FPS lives on PC and everything else is trash, and keyboard-and-mouse rules, they will tell you Unreal Tournament is the elite of the elite. The Quake of Today.
Its engine in fact is widely used by other games, including older versions that are used in free games like America's Army. The demo for Blacksite Area 51 uses the UT engine, or part of it, at least.
Call of Duty is a good game on its own merits, I never bought it but came close a few times. One reason I haven't is I never heard there was anything special about the online play, like there was about games like battlefront, battlefield 2 and warhawk. Anything other than run around and fight, a few modes, vehicles, CTF, zones, the usual stuff.
I would get Call of Duty if you like its subject material, maybe check out an older ps2 prequel and see.
UT3 has been very hyped by people who want to please the PC-shooter purists and show that their stuff can be matched on consoles, you can expect to run into a lot of people there and be playing what's on the cutting edge of development. I haven't heard anything about what the game is like, though, so I've held off on buying it. I'm a bit worried that, like Quake3, it'll be an amazing, fast multiplayer shooter with no substance, taken to a whole new level.
Also I think the demo for Blacksite, which uses the UT engine, sucks.

COD4 was breathtaking, and the multiplayer is the best currently on the console (along with Halo, but that game is by number rather than quality). I found myself disappointed with Unreal Tournament 3, since it's mostly more of the same with improved visuals.

I like Unreal tournament, since Call of Duty went modern, it made me mad :(. I really enjoyed the WW2 theme. I also like a very popular, and competitive multiplayer like Unreal Tournament.

For PS3 COD4 has more players. Though there's a 9 players per team limit.
