I've been reading reviews on 12'' ones and people say they are to big to heat evenly on a regular stove top burner, but a 10'' seems to small. I'll be using it for french toast, bacon, etc... What do you recommend?

I have a square cast iron skillet manufactured by Griswald of Erie Pensilvainia. It says No.2108 on the bottom. It measures 9.5 inches on the top from rim to rim. The sides are tapered slightly so the bottom is about 9 inches. It makes the best toast you ever seen. I bought it at a thrift store about 20 years ago here in El Paso Texas. You can cook two eggs and bacon at the same time. Bacon started first then add eggs. I cooks four pieces of Texas toast, (French toast) at the same time. It is my favorite if I have guests and must cook the whole package of bacon at the same time. The key to cooking with cast iron is not to have the heat up to high, so as to distribute the heat evenly within the metal. This pan is heavy so if you are able to find this company on the net, be forewarned it will cost to ship it. I makes really evenly browned corn bread too.
