Creamy Cajun Chicken Pasta
N'awlin's style of chicken with an up-dated Alfredo sauce.

2 boneless skinless chicken breasts, cut into thin strips
4 ounces linguine, cooked al dente
2 teaspoons cajun seasoning
2 tablespoons butter
1 thinly sliced green onion
1-2 cup heavy whipping cream
2 tablespoons chopped sun-dried tomatoes
1/4 teaspoon salt
1/4 teaspoon dried basil
1/8 teaspoon ground black pepper
1/8 teaspoon garlic powder
1/4 cup grated parmesan cheese
Place chicken and Cajun seasoning in a bowl and toss to coat.
In a large skillet over medium heat, sauté chicken in butter or margarine until chicken is tender, about 5 to 7 minutes.
Reduce heat add green onion, heavy cream, tomatoes, basil, salt, garlic powder, black pepper and heat through.
Pour over hot linguine and toss,with Parmesan cheese.

1-1/2 pounds fresh or frozen large shrimp
1/4 cup butter, melted
1/4 cup olive oil
6 cloves garlic, minced
2 tablespoons snipped fresh parsley
1 teaspoon finely shredded lemon peel
1/4 teaspoon salt
1/4 teaspoon black pepper
Hot cooked fettuccini (optional)
Lemon wedges (optional)
In a 13 x 9 x 2-inch baking pan combine butter, oil, and garlic. Broil 4 to 5 inches from the heat for 2 minutes. Add shrimp, parsley, lemon peel, salt, and pepper to baking pan. Toss ingredients to coat shrimp. Broil for 2 minutes. Turn shrimp over and broil for 1 minute more or until shrimp turn opaque. If desired, serve shrimp and butter-garlic mixture over hot cooked pasta. Serve with lemon wedges. Makes 4 servings.
PENNE WITH BASIL AND PROSCIUTTO
1 pkg. Penne Pasta
1-1/3 oz. Prosciutto
1 oz. Parmesan-Romano grated cheese
1 tbsp. olive oil
1/3 tsp. crushed red pepper
1/4 cup Fresh basil
Tear prosciutto into small strips. Cook penne according to package directions. Drain. Heat the oil in a saucepan or large skillet. Add the crushed pepper and heat for 1 minute. Add the pasta to the oil and pepper mixture. Toss so that the pasta is coated with the oil and peppers then add prosciutto, basil and cheese. Chop the basil at the last possible minute. Toss again and serve immediately.

Mushroom Walnut Sauce for Pasta
2 Tbsp. extra virgin olive oil
8 oz. Mushrooms - sliced
1/4 C. Walnuts - chopped
3/4 C. Heavy whipping cream
1/4 tsp. Black pepper
1/2 C. Fresh Parmesan - grated
Heat olive oil in large skillet over medium heat. Saute mushrooms and walnuts until mushrooms are golden. Add cream and cook stirring frequently for 5 minutes until slightly thickened. Turn heat to warm and when cream stops simmering, add pepper and Parmesan and stir until sauce is smooth. Do not boil. Serve over pasta. Especially good w/ stuffed pastas.

You can also toss cooked, buttered pasta w/ a spoonful of Basil Pesto. That is most likely what you had at the buffet.

Angel Chicken Pasta
6 skinless, boneless chicken breast halves
1/4 cup butter
1 (.7 ounce) package dry Italian-style salad dressing mix
1/2 cup white wine 1 (10.75 ounce) can condensed golden mushroom soup
4 ounces cream cheese with chives
1 pound angel hair pasta
DIRECTIONS:
1. Preheat oven to 325 degrees F (165 degrees C).
2. In a large saucepan, melt butter over low heat. Stir in the package of dressing mix. Blend in wine and golden mushroom soup. Mix in cream cheese, and stir until smooth. Heat through, but do not boil. Arrange chicken breasts in a single layer in a 9x13 inch baking dish. Pour sauce over.
3. Bake for 60 minutes in the preheated oven. Twenty minutes before the chicken is done, bring a large pot of lightly salted water to a rolling boil. Cook pasta until al dente, about 5 minutes. Drain. Serve chicken and sauce over pasta.

My favorite pasta is penne with vodka sauce
1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
2. Meanwhile, melt butter or margarine in a large skillet over medium heat. Add pancetta, and saute until lightly browned. Add vodka and stir until it is reduced by half, about 4 to 5 minutes. Stir in tomato sauce and cream. Simmer uncovered for 10 to 12 minutes. Stir every few minutes.
3. Stir in pasta, and heat through. Serve with Parmesan cheese.
