Presumably they would leave family and friends behind who would not be able to contact them, and who would report them missing

When somebody "vanishes without a trace" the people who interact daily with the missing person are normally the complainants to the missing person.
"Without a trace" would only refer to the unknown means of departure and route taken...however...there are significant people in each of our lives that know about us on a day to day routine!

Many, if not most people would normally be seen somewhere on a regular basis. If they fail to show up far an unusually long time, they are missing. For example, if I did not go to work for a week, my boss would probably have someone check my home. If I was not there, I would be considered missing.

Well, to vansih means to disappear. So, you know they are missing, because they are not there. "Without a trace" simply means there is no evidence to use to track or "trace" how, with whom, or where the person vanished in the first place.

If you can't find your keys then they are missing. Same with people. That's one of the word's definitions.

good question,
they know because they never come home and they never hear from them, so basically they don't know they just assume there missing because they can't really believe anything else because anything else wouldn't make sense to them expecially if that person was gone for a long time

Because companies, the government, banks, want their taxes, dues, and loans paid back. They'll notice when you stop paying.
