when i am kissing him on his face and rubbing him, sometimes he will take his big, fat head and crashes it right into mine like a ram. why does he do this?

Affection for sure. I am a long time cat person. I had one that lived to be 20 and another 18. Now I have a 2 year old and a 10 month old.

When two friendly cats meet they will often engage in head rubbing and sometimes gentle head bumping. It's a cheery hello, or the cat equivalent of a handshake. If your cat uses her head to greet you in this manner she is employing cat body language to tell you that she is pleased to see you.

Heheh, we call this "head bonking". in case you watch different kitties play, fairly wild ones that stay in packs, they try this as considered one of those i admire you and that i've got faith you. Its a super kitty hi.

It is a sign he's happy! Mine does it too. When I'm brushing her she will butt her head into the cabinet so hard you would think it would hurt but she's purring away.

it's a mainly male affection thing. i've seen it a lot in dominant male cats.
my female touches noses.
i had one cat who would lick my nose.
different cats show affection different ways, but headbutting is completely normal, especially with males. enjoy it! (hope it doesn't hurt too bad though! lol)

I think he's just showing his affection agressively (like how some cats jump towards your hand when you bend down to pet them), but maybe I misinterpreted your description...
