You are in big trouble. If you have any proof you paid him you better find it fast. If you paid the person less than six hundred dollars you are fine. Get your accountant on the phone asap. I also noticed you put worker. That means employee not independent contractor. Therefore you are going to most likely be one the hook for workman's comp, labor taxes, social security with-holdings etc. It might be in your best interest to claim the wages as personal income, pay the taxes, and have the worker get packing. You never have anyone work for you without covering your bases first. This situation may go from bad to worse.

Anyone visiting the USA and all of its residents, enjoy government benefits. However, they all pay taxes of some sort. Tourists pay taxes on lodging, transportation, gifts, etc; undocumented pay taxes on gas, logding, etc. However, legal tax paying residents pay the most but also recieve more benefits. The big one people claim is healthcare, emergency services and it is a big one, but then again there are plenty of legal residents who either do not have insurance, homeless, or just dont pay taxes who recieve these benefits as well (ie. Wesely Snipes). I think he anti-illegal immigration forces have an argument, but they are not being fair in stating that illegal aliens pay zero taxes.

This in and of itself is a CRIME. NOTHING you can provide to the IRS gets you out of that. Unless you had the worker SIGN a receipt every time you gave them cash, there is no such thing as a paper trail. Its your word against his and you just admitted you are BOTH breaking the law.

Start getting your witnesses.
If he successfully argues that you never paid him, then the IRS could argue that you don't get to claim the money as a deduction on your tax return. Plus he could argue that you STILL OWE HIM.
