My favorite food is Italian food, but I rather try something new. I was wondering what was a good French dinner I can make and prepare for tonight. Nothing like French Fries please or bagel or quiche. Something that's real good.

Steak au Poivre

4 ounces butter
1 cup heavy cream
2 cups stock
1 ounce brandy or cognac
3 shallots
4 filet mignon steak
2 tablespoons whole GREEN peppercorns (blanched for 15 seconds in boiling water)




clarify the butter

pan fry the steaks in the butter under medium heat until mostly done and set aside (keep warm while finishing the sauce)

put chopped shallots in the pan where the steaks were cooked and cook under low heat until translucent

Add brandy or cognac and flame the pan (with a long match)

Add stock and reduce by 3/4 under high heat (you want 1/4 of the original liquid)

Add cream and reduce by 1/3 (you want 2/3)

Add pepper corns

Taste for salt and pepper

Serve steak with sauce on top. Sauce is to die for.

I like baked potatoes and a green veggie with it

How about a nice herb infused roasted chicken? Add some roasted vegetables and a simple salad of baby lettuce, chopped green onion and homemade vinagrette of dijon mustard, lemon juice, olive oil, chopped chives, kosher salt and fresh ground pepper. For dessert? Fresh stewed fruits with cream.
