Well, sounds like you already know your own cooking pitfalls - frying and butter.
You should cook your food in a more healthy way - baking, grilling or broiling. Crock pot recipes are low-maintenance and are also more healthy than frying.
You might also want to try and cut out the red meat and pork from your diet. Concentrate on fixing fish/seafood and chicken. Those are two leaner types of meat that are versatile, but don't have all the excess fat and cholesterol that the others do.
Tank him up on fibre...it's an excellent way for him to eat less calories and feel more full. This can be found in fruit and vegetables, beans, legumes and brown rice.
Don't let avocados fool you - they are actually on the list of "good fats" that can be consumed, but in moderation. You don't have to cut those out of the diet completely. :-)
Cut out as many processed foods as you can - chips, cookies, soda, cereals, etc. Eat fruit and vegetables as snacks instead. Also cut down on white starches such as regular pasta, white bread and white rice. Eat whole wheat pasta, brown rice and wheat bread instead.
Those are just a few tricks that worked for me when I wanted to eat healthier.

My suggestions to your husband are:
1. Start a diet - probably Winter diet

3. Exercise - cardio exercises are best for fat burn. You can just walk together for 1 hour (5 km) every day
4. Go ahead even once you eat something "wrong"
5. Forget about the butter ;))
