The food went over well. I ended up adding red wine, garlic, and finding a really great canned sauce. Thanks!

Garlic and fresh herbs will make it taste much better and fresher. I like to add chopped fresh basil and oregano. You can get fresh herbs fairly cheap at almost any grocery store. Also, throw in a few fresh diced tomatoes, salt and pepper. Careful not to over-salt your sauce. Good luck with your party!

What kind of 'sauce' are you referring to? If it's a 'marinara' sauce, it's easy to make it taste 'fresh' ... pour the sauce into a large pan and add two 'glasses' (about 8-12 ounces each) of any dry red wine (Chianti or Burgundy are best), then add one to two tablespoons each of the following ... oregano, basil, chopped fresh parsley) and also add at least three LARGE cloves (one section of a bulb is a clove) of garlic, chopped fine. Simmer for an hour ... and taste. If you want you can also add beef broth or cooked beef ... I'd use a cheap steak like chuck, cooked and then 'sliced thin' and added with the juices from the cooking pan. You'll be surprised at how good this tastes ... but you can use this in smaller amounts to feed your family and they'll think you 'cooked for hours' to get that wonderful flavor ...

If you are talking about "red sauce" try adding just a splash red wine to it while heating. This brings out proteins in the tomato that you would otherwise not taste. It helps to make the sauce taste fresh. I also crush a clove of garlic and toss it in the pot while warming the sauce, but some folks don't like that much garlic.

I'm assuming you're talking about tomato sauce. I like to add a good sprinkle of cinnamon to the sauce. It cuts the acidity and gives a deeper flavor. Start with one small shake, stir, and taste -- add more if necessary, but only a little at a time. You can also try adding extra herbs, maybe some very well-minced garlic while it cooks.

I use extra virgin olive oil or regular olive oil, and chop up one onion and 2-3 cloves of garlic and saute it in the oil. Don't burn it! And you can add some red pepper flakes too. Then, I add the jar of sauce or buy peeled tomatoes. (whatever you prefer) I like the tomatoes! You can fry up ground beef separitely and then add to sauce to make a meat sauce! Sometimes if I make bacon, I save the fat from the bacon and add to my sauce! YUMMY! Then, you just add alittle salt, garlic powder, and oregano. I also chop up fresh parsley and basil and add it to the sauce. ENJOY!!!!

What kind of sauce? Spaghetti sauce, cheese sauce...what??? It would help knowing. If a tomato based sauce, carmelize some onions, fresh garlic and fresh peeled tomatoes in a sauce pan, then add to your canned sauce. Adding some fresh (not dried) chopped spices like basil, lightly sauteed in good quality olive oil will help.

I always like to add herbs and spices to make it taste better, although fresh is always better dried work just as well. What kind of sauce? If it is marinara try Oregano and Basil lots of basil is always good with tomato and add about a teaspoon of salt to every quart but taste first. If it is a white sauce try adding one or two pats of real butter salt and pepper to taste and personalize by adding grated cheese, Parmesan or onion. Good luck! :-)

Add some diced onion, bell pepper, and celery. Add some spices such as rosemary, oregano, and parsley. Smash a few garlic cloves, and perhaps even some more diced tomato.

That should get the closer to home made taste you want.

If you really want to change it, add some browned Italian sausage, crumbled up but not too small.

Adding garlic while it's cooking and fresh herbs in the last few minutes. This should liven it up a bit. Also, sauteed onions and bell peppers would add flavor as would meatballs, sausage or mushrooms.
