I'll add to Barry's comments.
If you like Cajun music, try Mulate's Restaurant on St. Charles, which has pretty decent food and a live Cajun band some nights. Or Michaul's Restaurant on Convention Center Blvd. across from the Riverwalk Shopping Center and just a block or two from the Morial Convention Center.
You can probably find Acme Oyster House in the French Quarter easily enough. I think it is on Iberville between Bourbon St. and Royal St. They have authentic fried seafood dishes and some broiled and blackened items on their menu. Myself, I like their "Peacemaker" po-boy. Fried shrimp and fried oysters on fresh crunchy French bread, with Tabasco-infused mayonnaise, lettuce, and tomato.
Hint: In N'Awlins, if you order a sandwich and want it to have lettuce, tomato, pickles (sometimes, depending on the restaurant), and mayonnaise, say "dressed" and they'll know what you mean.
I'd stay away from some of the big-name restaurants if they don't take reservations. K-Paul's (Paul Prudhomme's place) comes to mind. The line forms before the place opens and it doesn't have THAT much capacity. If it happens that you see a restaurant that claims to be a "John Besh" establishment, it will have good food but might be a TOUCH upscale. John Besh has won several awards and even came in second in the "Next Iron Chef" competition.
If it happens that you are a history buff, particularly if you had any relatives in WW II, then you can't miss the National D-Day Museum on Andrew Higgens Blvd. My grandson LOVES it. But it is not for everyone. The Aquarium of the Americas is another place that is great but again depends on taste.

My must see would include a visit to Cafe Du Monde at Jackson Square for the beignets and cafe au lait, or hot chocolate if you are not a coffee drinker. Ride the St. Charles streetcar the entire route (have exact change of $1.25 per person each way or buy a Visitour pass at a convenience store), and take the Canal Street ferry (FR*EE for pedestrians) across the Mississippi to Algiers and go see Mardi Gras World, where the Carnival floats are built. There is a free shuttle to take you there when you take the ferry to Algiers. I agree with going to see one of the above-ground cemeteries, but I strongly urge you to go with a tour group, and NOT on your own, both for safety and practicality. And, sign up to take a Katrina tour so you can see the status of the most devastated areas of town.

I'm sure you will end up in the French Quarter at some point, which is fun. I would also recommend seeing one or two of the above ground cemetaries, and the St Louis Cathederal. Also, look into a tour that takes you to the Oak Alley Plantation, very cool. Have fun and try not to veer off the main Burboun Street after dark. You can have a ton of fun in N.O., but it can be dangerous, too.

I love Magazine Street-great little restaurants and bars and unique shopping.
We had a great time staying at the Avenue Garden Hotel on St Charles in the Garden District. Dad types love the D-Day Museum but I've never been.

Go to Pat O'Brien's it's right on the French Quarter, there's the Cat's Meow, that's one of my favorites!!!! There's the steamboat cruise, that would be fun. And when you're there, try and see the Ghost tour, that's pretty cool.

The Zoo in New Orleans is awesome. I go every time I am in the city.
And take a ride on the Mississippi on a paddle boat. the evening cruises are wonderful.
