We had goose this year on Christmas Day and egg & chips on Boxing Day.
For a few hours yesterday , I made a HUGE bucket of broth with the leftover meat and bones (which I rest in a collander in the bucket). I add some potatoes, onions ,carrots, parsnips , peas etc salt and pepper and a few pints of water. When it's cooked and cooled I lift out the collander and cut off the meat and discard the bones. I made some dumplings with suet, flour, salt and pepper and mustard and cooked them in some of the broth for dinner today.
Tonight , I will divide the remainder into a saucepan for a curry,one for a stew again, some for a pie and some I puree down for stock.
From the stew pan I will put a portion up for each of the 2 mums and freeze it until it is needed
I notice you brought some back from your mum's - could this be where the weight gain comes in ?

Yes you can boil the bones down for stock. Just put the carcass in a big pot and cover with water (I usually have to break the carcass in half to get it into my biggest pot). Add some celery, onions and a few carrots and boil away. You can either just keep that for stock, or make soup. I didn't make turkey for Christmas, I made beef tenderloin, but I did make turkey for Thanksgiving. I made a great turkey soup with the carcass. If you want the recipe, email me.

I haven't had Turkey for over 12 years because I find it dull,you
can boil the bones down for soup or stock though,probably the tastiest way to eat it

Turkey soup only comes when there is nothing else left. What about curries, turkey and ham pie, turkey omelettes? Give it a whirl and be thankful it's only Christmas once a year. Happy new year.

I have southern roots, my family likes to put the turkey on toast with gravy and a little gravy and oven bake or microwave. And this is a week after we cook it.

yeahh that's exactly what we did.
warm turkey on xmas day, cold turkey with salad yesterday and turkey sandwiches with cranberry sauce today, yum!
