If you are not a fish fan, I would stay away from Mahi Mahi (great fish, but it is a fish and has a wonderful FISH taste). It is my favorite of the group you listed. I think tilapia may be the most non-tasting of the bunch, although it's a tough call between that and the red snapper.

For you I would definetely say Mahi Mahi.
It is not very "fishy".
If it is cooked right (grilled usually) then it is almost the consistency of a steak. It does not require a knife to cut through, but it looks and eats like a steak. It will fill you right up. Use fresh lemon juice!

of those i would choose mahi.
i would get it blackened or at least grilled.
i think it is the least fishy of those 3. and it has to be really fresh. tilapia is very much like catfish and red snapper can be very fishy.
my favorite is tuna.

Red snapper because it is abundant and doesn't endanger as much marine life when caught.
Tilapia because most of it is farmed.
Please try not to eat orange roughy as it is overfished and becoming scarce(endangered) in some parts of the world.

One of the best meals I have ever had in my life was stuffed red snapper. But have you ever tried cod? That is my favorite and not "fishy" or oily at all. Enjoy !

I would say either Tilapia in a parchment bag (baked in it) w/ fresh veggies, lemon, herbs, etc... steamed in the bag with it.
Simple grilled red snapper w/ lemon garlic butter. YuM!!!

tilapia, it cooks well and doesnt fall apart when handled, also it absorbes tastes easily, plus the "fishy" is very mild.
