my son goes to visit his father at 4:00 and he usually fails to feed him dinner(he arives home at 8:00 hungry & telling me he didnt eat anything), so its got to be something that will fill him up and that he'll eat.
I'm out of ideas and he never tells me what he wants, just what he doesnt want.

He is three, likes pasta... chicken... certain veggies but is picky, he likes fruit.

First of all.. I would tell his father that he should be feeding him dinner during their visits.. Also make sure your son knows to let someone know when he starts feeling hungry so they can get him a snack or something...

As far as meal ideas... You could make him cheese and chicken quesadillas! My boys LOVE those! Grilled ham and cheese sandwiches with soup are a big lunch time hit in my house too.... I'm very luck though, my boys will eat just about everything! Spaghetti is their number one favorite I think. You can make a big pot of Spaghetti sauce and freeze it in individual serving containers and just take some out little by little each time you need it... just heat it up and boil some noodles and your good to go!

Make him a chicken & cheese quesadilla. Cook the cihcken and shred or dice. Between 2 flour tortillas put chicken and cheese. Nuke, or grill in pan on each side. Add some fresh fruit on the side.

When his dad picks him up, gently and sweetly remind him that HIS son normally gets hungry around 6:00, so be sure to plan on feeding him by then. Men don't hink about stuff like that. He's not being a hateful father, he's just not thinking. And let your son know it's okay to let his dad know he's hungry.

Will he eat chicken quesadillas? I find those to be pretty filling and they are easy to make. You could put some spanish rice with it to make it fill him up a little longer. Then maybe a cup of fruit or cut veggies that he could eat in the car on the way.

Otherwise some pasta with chicken in it. If you don't have pasta sauce, just put some melted butter & parmesan on it or a splash of italian dressing. The ground turkey could be made into taco filling also.

Sneaky Veggies and Deceptively Delicious are good cook books for getting extra veggies into everyday meals. I found them at my libarary.

You can always fix grilled chicken, steamed veggies ( kids usually really do like these) maybe some mac-n-cheese. With some sugar free jello for dessert. You can make your own with fresh fruit or by a package of mix. Sounds good to me. Hot dogs are fast too, and filling. Kids typically like food that can easily be held in their hands ... so , hamburgers go over well also. I know he is just three, but... I bet he would like the veggies!

If you have cheese, you can make a quesadilla. it can be corn or flour tortillas. You can make macaronni and cheese with some chicken in it. My son loves that (he's 4). You can also cut up the chicken, bread it and bake it, then he can have something to dip. You have a lot of options.
