I've been invited to what I know will be a kick butt New Years Party. We will not be staying all night (my babies won't last and there's tons of crazies on the road)...BUT I still want to bring a great dish! I was thinking buffalo chicken dip, but my mom is bringing her most excellently hot buffalo wings so I need to think of something else. Any ideas? There will be about 30 of us there...my other thought was sweet/sour meatballs (bag premade meatballs 1 bottle chili sauce, 1 bottle currant jelly)....other thoughts?

Kick A#$ Macaroni & Cheese
Homemade super cheesy mac and cheese with a spicy bite to it.
An old Southern Recipe
1 (16 ounce) box elbow macaroni
1/2 cup butter (softened)
1 (13 ounce) can evaporated milk
1 (16 ounce) package sharp cheddar cheese
1 (8 ounce) package mild cheddar cheese
1 (16 ounce) box Velveeta cheese
1 (4 ounce) can jalapeno peppers, chopped
salt and pepper
Cook elbow noodles according to directions. While the pasta is cooking cut 16 oz block of cheese into small cubes and slice the Velveeta into pieces. Drain the pasta when done, do not rinse. Return the pasta to the pot; add butter, milk, cheese cubes and slices to the hot pasta. Mix well until the Velveeta is melted. The mixture will be soupy and the cubes of cheese will not be melted completely. Add the peppers and salt and pepper to taste. Pour in baking dish. Cover with the 8 oz of cheddar that has been shredded.
Bake at 350°F for 35 minutes. Top should be browned and pasta should be set.

Meatball Sauce
1/2 cup barbeque sauce
1/2 cup peach preserves
Mix the above and heat, toss cooked meatballs in mixture and serve hot.

I'd take something that didn't need to stay warm, so nothing with cheese or melty stuff. How about a great big tossed salad full of everything you can think of and a pretty cruet of dressing beside the bowl. You'll be surprised how fast something fresh will move.

Here is my personal recipe for a lentil salad that gets great reviews at potlucks. If you are looking to save time and are near a Trader Joe's, they have steamed lentils in a vacuum pack in the produce section that work quite well in this dish.

MEDITERRANEAN LENTIL SALAD

This is a terrific buffet or picnic salad. If you don't care for raw green onions, you may substitute 1/2 yellow onion, finely diced. Sauté the onion in the olive oil along with the cumin until onion is translucent.

Serves: 6 - 8

2 Cups brown or green lentils washed
1 bunch Italian parsley, chopped fine
1 bunch fresh mint leaves finely chopped
3 green onions (white and green parts), finely chopped
2 Roma tomatoes peeled, seeded and diced small
Juice from two fresh lemons
3 Tablespoons fruity, extra-virgin, olive oil
2 teaspoons ground cumin
Salt and pepper to taste
1 Cup feta cheese crumbled

Put lentils in a pot, cover with water and cook on medium heat until nearly done about 10 or 15 minutes. Cover the pot, turn off heat and let sit for about 20 minutes. Drain off any excess water and cool completely. Combine lentils, parsley, mint, tomatoes and onion, lemon juice and 2 Tbs. oil. Heat 2 Tablespoons of olive oil in small saute pan; sprinkle in cumin and heat through. Allow to cool until just warm and combine with lentil mixture. Season to taste with salt and pepper. Chill salad covered in refrigerator for at least one hour or overnight. Garnish with crumbled feta cheese and serve.

Little smokies, wrapped in bacon, stuck with a toothpick, sprinkled with brown sugar and a little maple syrup, baked in the oven...these are so good. You cant stop eating them. You forget how terrible they are for you because they taste soooooo good. WAY Better than the sweet and sour meatballs!

It takes about a day and a half to prepare, but very inexpensive, and very attractive.
